Why You’ll Love this Arby’s Beef and Cheddar!

A woman with long dark hair, wearing earrings and a burgundy top, smiles at the camera in front of a textured, beige background.

Arby’s Beef and Cheddar has always been one of my guilty pleasures because it is messy, cheesy, saucy, and so satisfying.

Making it at home is surprisingly simple, and the flavor is even better when everything is hot off the stove. The homemade cheddar sauce and red spread bring that iconic taste, while the warm roast beef and toasted onion bun make every bite perfect.

It’s one of those fun, crave-worthy dinners that feels like a treat without ever leaving the house! Serve with Arby’s Sauce, Easy Homemade French Fries, Deep Fried Onion Rings and Coleslaw Recipe to complete this Easy Copycat Recipe!

How to Make Arby’s Beef and Cheddar

A black saucepan with various spices, Arby’s Sauce, ketchup, and seasonings sits on a white tiled countertop beside a white towel with red stripes and a metal whisk.

Step 1 – Whisk all the sauce ingredients together in a small saucepan.

Step 2 – Heat over medium high heat and cook for 5-7 minutes, stirring frequently, until the sauce is combined and thickened. Remove from heat and let cool slightly while you prepare the sandwiches.

Step 4 – Add the sliced roast beef into the pan, 1 slice at a time. Allow the beef to soak up the warm broth for a few minutes and then remove from the pan. Continue this process until all the roast beef is heated through.

Step 5 – Microwave the nacho cheese sauce in 20 second intervals until heated through if using store bought or prepare if making homemade cheese sauce.

Recipe Notes

Watch the sauce as it cooks. If it gets too thick, thin it out with a small amount of water until it’s the consistency that you prefer. If the sauce does not get thick enough, continue to cook on medium heat until it thickens. You can use store bought sauce instead of making your own if you prefer.
I heat up the roast beef slices one at a time but if you use more broth and a bigger pan, you can heat up all the slices at once if you prefer.
You can easily serve without the cheese sauce to make a regular Arby’s roast beef sandwich as well.
Heat up the buns before assembling if you prefer but they are great as is as well.
