Take your grilled cheese to the next level with this Bacon Grilled Cheese recipe. Top you bread with two different cheeses and bacon for a delicious sandwich.
Cook the bacon in a large skillet over medium-high heat until crispy. Transfer to a paper towel-lined plate. Drain the bacon grease, leaving about 1 tablespoon in the skillet.
Spread mayonnaise on one side of each slice of sourdough bread.
Heat the skillet with the reserved bacon grease over medium heat. Place 2 slices of bread in the skillet, mayonnaise-side down.
Top each slice with 2 slices of cheddar cheese, 2 slices of bacon, and 2 slices of pepper jack cheese. Top with the remaining bread, mayonnaise-side up.
Cook for 4–5 minutes, until the bottoms are golden brown. Flip and cook for another 4–5 minutes, until golden brown and the cheese is melted.
Remove the sandwiches from the skillet, cut in half, and serve warm.
