Preheat the oven to 400°F. Line a baking sheet with parchment paper.
In a small bowl, mix together 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, 1/2 teaspoon dried thyme leaves, and 1/2 teaspoon dried rosemary leaves.
Rub 2 tablespoons olive oil evenly over both sides of 4 bone-in pork chops that are 3/4 to 1 inch thick.
Sprinkle the seasoning mixture evenly over both sides of the 4 pork chops, rubbing it in gently so it adheres well.
Place the seasoned pork chops on the prepared baking sheet.
Bake the pork chops in the preheated oven for 20-25 minutes, or until they reach an internal
temperature of 145°F at the thickest part.
Remove the pork chops from the oven and let them rest for 5 minutes before serving.
Notes
Allow the pork chops to come to room temperature before cooking to ensure even cooking.Choose pork chops that are 3/4 to 1 inch thick for the best results. Thinner chops may dry out quickly, while thicker chops may require a longer cooking time.
