Preheat the oven to 375 degrees Fahrenheit and spray a 9x9 baking dish with non-stick cooking spray.
In a large mixing bowl, mash 1 ripe banana.
Stir in 1¾ cups milk, 1/3 cup maple syrup or honey, 2 large eggs, 2 tablespoons melted unsalted butter, 2 tablespoons brown sugar, and 2 teaspoons vanilla extract until fully combined.
Add 3 cups old fashioned oats, 1 teaspoon baking powder, 2 teaspoons ground cinnamon, and ½ teaspoon salt. Stir until just combined.
Gently fold in 1 pint fresh blueberries and ¼ cup roughly chopped pecans.
Pour the mixture into the prepared baking dish.
Sprinkle the remaining ¼ cup chopped pecans evenly over the top and gently press them into the batter.
Bake for 42–45 minutes until golden brown and set.

You can easily use any type of berries and nuts that you prefer for this easy baked oatmeal recipe. This recipe is great served as is, topped with yogurt or additional syrup. Refrigerate any leftovers in an airtight container for up to 4-5 days. Microwave the individual servings before serving.
