Naturally sweetened baked oatmeal is one of my favorite breakfast recipes to meal prep for the week. I can easily change the fruit to what is in season for a delicious and healthy breakfast idea.

Why We Love Baked Oatmeal

Baked Oatmeal makes it easy to give my family a healthy, homemade breakfast. I can slice a small individual portions and serve with a side of fresh fruit and Over Hard Eggs for a complete breakfast idea.

I have even added in mini chocolate chips for a hint of chocolate in every bite. This Baked Oatmeal is very filling and my entire family loves it so much I have to double the recipe.

Ingredients

Ingredients needed to make this recipe which includes Bananas, milk, maple syrup, eggs, butter, brown sugar, vanilla extract, oats, baking powder, cinnamon, salt, pecans, and blueberries.
  • Banana – We recommend using a rip, mashed
  • Milk – We like using whole milk, but you can use other types of milk such as almond milk or soy milk
  • Maple Syrup or Honey – Gives the baked oatmeal a natural sweetness
  • Eggs – Helps to bind the baked oatmeal mixture together
  • Butter – We used unsalted, melted butter
  • Brown Sugar – Learn How to Make Brown Sugar
  • Vanilla Extract – For the best flavor use pure vanilla extract
  • Old Fashioned Oats – You can use rolled oats or quick oats as well. You can use certified gluten-free oats if you need a gluten free option
  • Baking Powder – Helps to bake the oatmeal evenly
  • Ground Cinnamon – Gives the Baked Oatmeal warm flavors. Nutmeg and Ginger is also a great addition
  • Roughly Chopped Pecans – Feel free to use walnuts or slice almonds
  • Blueberries – You can use Fresh or Frozen Blueberries

How to Make Baked Oatmeal

Step 1 – Preheat the oven to 375 degrees F and spray a 9X9 baking dish with non-stick cooking spray.  

Combining milk, eggs, brown sugar, and vanilla extract in a bowl with a wooden spoon.

Step 2 – Mash the banana in a large bowl. Stir in the milk mixture which includes maple syrup or honey, eggs, melted butter, brown sugar and vanilla extract until combined.

Oats, cinnamon, baking powder mixed with the milk mixture.

Step 3 – Whisk in the dry ingredients including the oats, baking powder, ground cinnamon and salt until just combined with wet ingredients. 

Adding in blueberries and chopped pecans into the oat mixture in a bowl with a wooden spoon.

Step 4 – Gently mix in the blueberries and half of the chopped pecans into the oat mixture.

Step 5 – Pour the batter into the prepared pan. Sprinkle the remaining chopped pecans on top. Gently press them down into the batter.

Step 6 – Bake for 42-45 minutes until golden brown.  Serve warm with a drizzle of maple syrup or with your favorite toppings and enjoy!

  • Prepare Baking Dish – To easily serve and to make cleaning the pan easier, we recommend spraying the baking dish with cooking spray.
  • Slightly Cool – Before slicing and serving the baked oatmeal, make sure to allow it to cool for about 10 minutes.
  • Meal Prep – This baked oatmeal would be perfect to meal prep for the week for a healthy, on the go breakfast.

Can I Make into Muffins?

Yes, you can divide the baked oatmeal into muffin cups and bake at 350 degrees for about 20 minutes. Baking time will vary depending on the size of the muffins.

Can I Use Frozen Blueberries?

Yes. No need to thaw them before adding to the batter.

Why Is My Baked Oatmeal Dry?

Overbaking can cause dryness. Remove it from the oven when the center is set and the top is lightly golden.
