Ingredients for Crock Pot Breakfast Casserole Recipe:
- Frozen Hash Brown Potatoes
- sausage
- green onions
- sharp cheddar cheese
- red bell pepper
- green bell pepper
- Eggs
- Milk
- salt and pepper
How To make Slow Cooker Breakfast Casserole:
I use a large skillet to cook the ground sausage first.
Make sure you spray the slow cooker with cooking spray or use crock pot liners.
Layer half of the frozen hash browns, sausage, onions, cheese and peppers. Repeat the layers ending with cheese.
In a large bowl whisk the eggs, milk, and salt & pepper in a medium bowl.
Pour the egg mixture over the ingredients in the crock pot. Easy!
You can cook on low until the eggs are set if you want to do it the night before or high if you are doing it that morning.

- Try spicy sausage to add a little heat.
- Substitute ham for the sausage.

One of our favorite time saving tips is to use a small food chopper or food processor to quickly and easily chop onions. If you do not have one of these, I highly recommend them.
They are such a time saver and you make cooking so fast and easy. I usually just chop the entire vegetable and freeze what I don’t need.
It’s so nice to be able to just take the diced onion out of the freezer for recipes. We save a ton of time during the week by having items like this already on hand chopped and ready to go in the freezer.

Crock pot Breakfast Casserole
Ingredients
- 1 bag Frozen Hash Brown Potatoes (32 oz)
- 1 lb sausage browned and crumbled
- 2 green onions sliced (plus some to top at serving)
- 8 oz sharp cheddar cheese hand shredded
- 1/2 red bell pepper diced
- 1/2 green bell pepper diced
- 12 Eggs
- 1 cup Milk
- 1 teaspoon salt
- 1 teaspoon pepper

- Grease a 6qt slow cooker.

I would use the lower end of the cook time if you cut the recipe in half.
I want to take out the potatoes and use cauliflower rice instead. Will this work. Thanks
I haven’t tried that yet so I can’t say for sure. However, I think the cauliflower rice will cook faster than the potatoes so it might get over cooked in the crock pot with this recipe.
