6Boneless Skinless Chicken Breasts
2Large Eggs
2cupsPlain Panko Bread Crumbs
3TablespoonsRanch Seasoning Mix
1teaspoonSalt
1teaspoonPepper
1cupShredded Sharp Cheddar Cheese
½cupGrated Parmesan Cheese
Instructions
Preheat oven to 425°F and coat a baking dish with 2 tsp olive oil.
Pound 6 chicken breasts to about ¼-inch thick.
Whisk 2 eggs in a bowl.
In another bowl, mix 2 cups panko breadcrumbs, 3 Tbsp ranch seasoning, 1 tsp salt, 1 tsp pepper, 1 cup shredded cheddar cheese, and ½ cup grated Parmesan cheese.
Dip each chicken breast into the eggs, then coat in the breadcrumb mixture.
Place in the prepared baking dish.
Bake for 25–30 minutes, until internal temperature reaches 165°F and tops are golden.
Rest for 10 minutes, then serve.

Notes
Refrigerate the leftover chicken in an airtight container for up to 5 days. The chicken coating will get soft when refrigerated. You can make the coating crispy again by baking or air frying the leftover chicken when reheating.
