In a small bowl, mix together 1 teaspoon smoked paprika, 1 teaspoon garlic powder, ½ teaspoon salt, and ¼ teaspoon black pepper.
Rub the seasoning mixture evenly over both sides of 4 boneless pork chops.
In a separate bowl, whisk together ½ cup ketchup, 2 tablespoons brown sugar, 1 tablespoon Worcestershire sauce, 1 tablespoon apple cider vinegar, 1 teaspoon Dijon mustard, ½ teaspoon smoked paprika, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, and ¼ teaspoon black pepper. Set aside.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
Add the seasoned pork chops and cook for 4–5 minutes per side, until golden brown.
Reduce the heat to medium-low and pour the homemade barbecue sauce over the pork chops.
Simmer for 5–7 minutes, until the pork chops reach an internal temperature of 145°F and the sauce has thickened slightly.
Remove the skillet from the heat and let the pork chops rest in the sauce for 3–5 minutes.
Serve hot with extra sauce spooned over the top. Enjoy!
Notes
I would probably do around 6 ounce chops. If you do thicker, you will need to adjust the cooking times. The homemade barbecue sauce can be made in advance and stored in an airtight container in the refrigerator for up to 1 week.If you like your barbecue sauce spicier, add a dash of hot sauce to the mixture.Refrigerate the leftovers in an airtight container for up to 5 days.
