In a small bowl, mix together the smoked paprika, garlic powder, salt, and pepper. Rub the mixture evenly over both sides of the pork chops.
In a separate bowl, whisk together all the ingredients for the homemade barbecue sauce until well combined. Set aside.
Heat the olive oil in a large skillet over medium-high heat. Add the seasoned pork chops and cook for 4-5 minutes on each side, or until golden brown.
Reduce the heat to medium-low and pour the homemade barbecue sauce over the pork chops. Simmer for 5-7 minutes, or until the pork chops are cooked through (internal temperature should reach 145°F) and the sauce has thickened slightly.
Remove the skillet from the heat and let the pork chops rest in the sauce for 3-5 minutes.
Serve the pork chops hot, with extra sauce spooned over the top.
Notes
I would probably do around 6 ounce chops. If you do thicker, you will need to adjust the cooking times. The homemade barbecue sauce can be made in advance and stored in an airtight container in the refrigerator for up to 1 week.If you like your barbecue sauce spicier, add a dash of hot sauce to the mixture.Refrigerate the leftovers in an airtight container for up to 5 days.
