In a large skillet over medium heat, brown 1 pound ground beef until fully cooked. Drain excess grease if needed.
Stir in 1 tablespoon taco seasoning, ½ teaspoon salt, 1 can Rotel, ½ finely diced yellow onion, and ¼ cup water. Cook for 4–5 minutes until the onion is soft and the flavors are combined.
Remove the meat mixture from the heat and let it cool slightly so the burritos do not become soggy.
In a separate saucepan, heat 1 can refried beans over medium-low heat until warmed through.
Lay 6 large burrito-size flour tortillas on a clean work surface.
Spread a layer of warm refried beans onto each tortilla.
Add approximately ? cup cooked rice to each tortilla.
Spoon the beef mixture evenly over the rice.
Top each burrito with shredded cheddar cheese, shredded iceberg lettuce, diced roma tomatoes, and finely diced red onion.
Fold the sides of each tortilla inward and roll tightly into burritos.
Serve immediately with hot sauce or salsa if desired.
