Ingredients

Black Beans
(drained)

cups
whole Kernel Corn
(frozen or canned)
1
large Tomato
(diced)
1
small Onion
(diced)

Tablespoons
Lime Juice
Cilantro Leaves
(optional)
Salt and Pepper to taste
Instructions
If using frozen corn, thaw 2 cups corn and bring to room temperature.
In a large bowl, combine 1 can (15 oz) drained black beans, 2 cups whole kernel corn, 1 large diced tomato, and 1 small diced onion.
Add 2 tablespoons lime juice and chopped cilantro leaves if desired.
Season with salt and pepper to taste.
Gently mix everything together until well combined.
Serve immediately or store in an airtight container in the refrigerator.
