Blackberry Cobbler is the perfect summertime dessert! This cobbler is made from scratch with a golden brown crust with juicy blackberries. Everything comes together easily for an Old Fashioned dessert everyone loves.
Preheat the oven to 350 degrees F and spray a 9X9 or 3 quart baking dish with non-stick cooking spray.
Wash the blackberries and pat them dry.
In a large mixing bowl, whisk together the butter, milk, all purpose flour, 1 cup granulated sugar, baking powder and salt until combined.
Pour this mixture into the prepared baking dish.
Sprinkle the blackberries evenly on top (they will sink in). Top the berries with the coarse sugar.
Bake for 40-50 minutes until the batter is cooked through and lightly golden brown.
Serve warm topped with vanilla ice and enjoy!

This cobbler is best served within 2 days of making it but you can refrigerate any leftovers in an airtight container for up to 5 days. This cobbler is pretty rich. If you want a less rice cobbler, reduce the butter amount to ¼ cup. Watch the cobbler closely as it cooks and if the top is getting too brown, loosely tent the top of the cobbler with foil to stop the top from burning.
