Rub 2 tablespoons olive oil on both sides of the 4 bone-in pork chops.
In a small bowl, whisk together 1 teaspoon paprika, 2 teaspoons salt, and 1 teaspoon black pepper.
Sprinkle the seasoning mixture evenly over both sides of the pork chops and gently rub it into the meat.
Place the pork chops directly over the heat on the grill and cook for 2 minutes per side.
Move the pork chops to indirect heat and reduce the grill temperature to medium. Continue cooking for 10–15 minutes, or until the pork chops reach an internal temperature of 145 degrees F.
Remove the pork chops from the grill and let them rest for 5–10 minutes before serving.
