This caesar salad dressing recipe isn't very hard. In fact it is very easy to make to make a delicious ceasar salad. Add chicken and you have a complete meal.
In a blender or food processor, add 3 anchovy fillets, 1 tablespoon minced garlic, 1 egg yolk, 2 tablespoons lemon juice, ½ teaspoon Worcestershire sauce, and ½ teaspoon Dijon mustard.
Pulse until liquified.
With the blender running, slowly add ¼ cup olive oil followed by ½ cup vegetable oil through the feed tube. Continue blending until a thick dressing forms.
This should produce a thick dressing.
Add ¼ cup grated Parmesan cheese and pulse until combined.
Add salt, pepper, and additional lemon juice to taste.
Refrigerate until ready to use.
Place 3 chopped romaine hearts in a large serving bowl.
Drizzle with desired amount of dressing and toss until well coated.
Top with ¼ cup shaved Parmesan cheese, 2 cups croutons, and freshly ground black pepper before serving.
