These Cheeseburger Quesadillas are loaded with seasoned ground beef, melted cheddar, chopped pickles, and a homemade special sauce all tucked into a crispy golden tortilla — just $2.69 a serving and on the table in under 20 minutes.
Heat a large skillet over medium-high heat and add ground beef. Cook the beef until it is fully browned and no longer pink, then season it with salt and pepper.
Drain any excess grease from the skillet.
In a small mixing bowl, stir together mayonnaise, ketchup, minced pickles, minced onion, and white vinegar until the sauce is smooth and combined.
Heat a separate skillet or griddle over medium-high heat.
Place 1 burrito-size tortilla onto the skillet and spread some of the special sauce over one half of the tortilla.
Top the sauce with a portion of the cooked ground beef, chopped dill pickles, and shredded cheddar cheese divided evenly among the quesadillas. Fold the tortilla in half.
Cook the quesadilla for 2–3 minutes until the bottom is golden brown, then carefully flip it and cook for another 2–3 minutes until the other side is golden brown and the cheese is melted.
Transfer the cooked quesadilla to a plate and repeat the process with the remaining tortillas and filling ingredients to make 3 more quesadillas.
Slice each quesadilla into 4 pieces, serve warm, and enjoy.
