If you love making quesadillas as much as my family, than this Cheeseburger Quesadillas is for you. Take a flour tortilla a fill with your favorite cheeseburger ingredients.
Heat a large skillet over medium-high heat and add 1 pound ground beef. Cook the beef until it is fully browned and no longer pink, then season it with ½ teaspoon salt and ¼ teaspoon pepper.
Drain any excess grease from the skillet.
In a small mixing bowl, stir together ½ cup mayonnaise, 2 tablespoons ketchup, 2 tablespoons minced pickles, 1 tablespoon minced onion, and 2 teaspoons white vinegar until the sauce is smooth and combined.
Heat a separate skillet or griddle over medium-high heat.
Place 1 burrito-size tortilla onto the skillet and spread some of the special sauce over one half of the tortilla.
Top the sauce with a portion of the cooked ground beef, ¼ cup chopped dill pickles, and 2 cups shredded cheddar cheese divided evenly among the quesadillas. Fold the tortilla in half.
Cook the quesadilla for 2–3 minutes until the bottom is golden brown, then carefully flip it and cook for another 2–3 minutes until the other side is golden brown and the cheese is melted.
Transfer the cooked quesadilla to a plate and repeat the process with the remaining tortillas and filling ingredients to make 3 more quesadillas.
Slice each quesadilla into 4 pieces, serve warm, and enjoy.
