This Cheesy Corn Casserole is rich, creamy, and loaded with sweet corn and melted cheese! This is an easy side dish for holidays, potlucks, or family dinners!
Preheat the oven to 350 degrees F and spray a 9X13 baking dish with non-stick cooking spray.
In a medium size mixing bowl, beat together the butter and softened cream cheese until combined.
Hand stir in the creamed corn, drained corn, Jiffy cornbread mix, eggs and shredded cheese.
Pour the mixture into the baking dish.
Bake for 30-35 minutes until golden brown and the casserole is set.
Let sit for 5-10 minutes and then the casserole is ready to serve and enjoy!

Using Jiffy Corn Muffin Mix - Don't prepare the Jiffy corn mix based on the package instruction just dump the bag into the mixing bowl with the other ingredients.
Baking - Make sure that the middle of the casserole is set and still slightly jiggly when it's done. The casserole will continue to cook as it sets.
Use Freshly grated cheese - It melts smoother, creamier and there are no added ingredients.
