13 oz boxlime jello mix
1cupwater
Frosting:
1cupunsalted butter(softened)
1cuppowdered sugar
1tbspheavy whipping cream
1tspcherry extract
red gel food coloring
Instructions
Cupcakes:
Prepare and bake the white cake mix according to the package directions to make 24 cupcakes.
Allow the cupcakes to cool for 10–15 minutes.
Using a fork or skewer, poke holes all over the tops of the cupcakes, making sure to poke deep enough for the gelatin to soak in.
Bring the water to a boil, then whisk in the lime gelatin until completely dissolved.
Spoon the gelatin mixture evenly over each cupcake.
Refrigerate until the gelatin is fully set.
Cherry Frosting:
Beat the softened butter until smooth and creamy.
Gradually beat in the powdered sugar until light and fluffy.
Mix in the heavy whipping cream and cherry extract.
Add a few drops of red gel food coloring and mix until evenly colored. If needed, add a little more powdered sugar until the frosting is stiff enough for piping.
Assemble:
Transfer the frosting to a piping bag fitted with a large decorating tip.
Pipe the frosting onto the cooled cupcakes.
Garnish each cupcake with a small fresh lime wedge, if desired.
Serve immediately or refrigerate until ready to serve.
