In a large food processor, combine 2 cups all-purpose flour, ¼ teaspoon baking soda, 1 tablespoon baking powder, and 1 teaspoon salt.
Add 6 tablespoons cold unsalted butter, cut into cubes, and pulse until the butter is evenly incorporated into the flour mixture.
Transfer the mixture to a large bowl. Make a well in the center and add 1 cup cold buttermilk and 1 tablespoon honey. Stir gently with a spatula until a dough forms. Do not overmix.
Lightly flour a work surface and knead the dough a few times. Roll the dough into a 1-inch-thick rectangle, then cut out the biscuits using a biscuit cutter or a floured drinking glass.
Line a baking sheet with parchment paper and place the biscuits on the baking sheet so they are not touching.
Bake for 8–10 minutes, or until the biscuits are golden brown and cooked through.
Brush the tops of the warm biscuits with 2 tablespoons melted butter before serving.
