Instructions
Heat 2 tablespoons olive oil in a large pot over medium-high heat.
Add 1 finely chopped white onion and sauté for 5 minutes until tender.
Stir in 1 tablespoon minced garlic and cook for 1 minute until fragrant.
Add 2 teaspoons cumin, 2 teaspoons dried oregano, and 1 teaspoon salt. Stir to combine.
Place 2 cans cannellini beans with their liquid into a blender and blend until smooth.
Add the pureed beans, the remaining can of cannellini beans, 2 cans diced tomatoes with green chilies, 1 can cream style corn, 1 can whole kernel corn, 1 can black beans, and 1 pound shredded cooked chicken to the pot. Do not drain any of the canned ingredients.
Stir well and simmer over medium heat for 15–20 minutes until heated through and combined.
Stir in the juice from 1 lime.
Taste and add additional salt if needed.
Serve warm with your favorite toppings.

Chicken Tortilla Soup Chick-Fil-A Tips
Vegetables - Cook the vegetables before adding the remaining ingredients to enhance the flavor.
Beans - You can change the beans if you prefer. We have used navy beans and the soup was still delicious.
Don’t Skip the Toppings - Tortilla strips are key to that Chick-fil-A vibe.

Spicy Version - Add fresh slice jalapeños, green chiles or 1/2 tsp of cayenne pepper for a spicy kick of flavor.
Slow CookerVariations - Cook on low for 6–7 hours or high for 3–4 hours.
