Whisk together ¾ cup pickle juice, ? cup milk, 2 tsp powdered sugar, 2 tsp pepper, 2 tsp salt, and 1 tsp garlic powder.
Marinate 2 chicken breasts (filleted into 4 pieces) in this mixture for at least 30 minutes or up to 4 hours.
Preheat a grill to medium high heat (about 400°F) and rub the grates with 1 Tbsp olive oil.
Place the chicken on the grill and cook for 3–5 minutes per side until the internal temperature reaches 165°F.
Move the chicken to a separate plate to rest for at least 5 minutes.
Spread dressing of choice on 4 multigrain buns. Top each with 1 lettuce leaf, sliced tomato, and a piece of grilled chicken.
Serve and enjoy!
Notes
Refrigerate any leftover chicken in an air tight container for up to 5 days.I used the pickle juice from an open jar of pickles in my refrigerator. You can also butter and toast the buns before assembling the sandwiches if you prefer.
