In a large bowl, combine 3 cups cooked diced chicken breasts, ¾ cup mayonnaise, ½ teaspoon salt, and ¼ teaspoon dill weed. Mix until well combined.
Peel, seed, and dice 2 medium cucumbers, then gently stir them into the chicken mixture.
Slice 1 tomato and separate 6 lettuce leaves.
Slice open 6 croissant rolls.
Spoon the chicken mixture onto each croissant and top with lettuce leaves and tomato slices.
Serve immediately and enjoy.

Variation Ideas
Chicken - You can substitute the chicken with canned chicken but the texture will be different. Other easy substitutes to make this salad is to make it with leftover chicken, rotisserie chicken or grilled chicken.
Additions - Feel free to add in more veggies for even more flavor. We suggest tomatoes, bell peppers, radishes, red onion, garlic, scallions and avocado.
Greek Chicken Salad - For a delicious variation, add in diced kalamata olives, cherry tomatoes, fresh cilantro and crumbled feta.
Spicy Kick - Toss in sliced jalapeños or red chili flakes.
