2lbs.Boneless Skinless Chicken Breastscut into bite size pieces
½yellow oniondiced
1stick celerydiced
4cupsbroccoli floretsabout ½ lb.
10.5oz.cream of chicken soup
½cupsour cream
½cupmilk
½teaspoongarlic powder
½teaspoonpepper
½teaspoononion powder
½teaspoonmustard powder
2-3cupscheddar cheeseshredded

½cuppanko breadcrumbs
2tbspbutter
Instructions
Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish.
Cut the chicken into bite-sized pieces.
Melt 2 tablespoons butter in a large Dutch oven or skillet over medium heat.
Add the chicken, onion, and celery. Cook for 3 minutes, stirring occasionally.
Stir in the broccoli florets and continue cooking for 3–5 minutes, or until the chicken is cooked through and the broccoli is crisp-tender. Remove from the heat.
Stir in the cream of chicken soup, sour cream, milk, garlic powder, pepper, onion powder, mustard powder, and half of the shredded cheddar cheese until well combined.
Transfer the mixture to the prepared baking dish and sprinkle the remaining cheese evenly over the top.
Cover with foil and bake for 20 minutes.
Increase the oven temperature to 400°F. Melt the remaining 2 tablespoons butter and toss with the panko breadcrumbs. Sprinkle evenly over the casserole.
Bake uncovered for 8–10 minutes, or until the topping is golden brown and crispy.
Let the casserole rest for 5 minutes before serving.
Notes
Fresh or frozen broccoli florets both work well. If using frozen broccoli, thaw and drain well before adding.
Use 2 cups of cheese for a lighter casserole or 3 cups for an extra cheesy version.
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave or oven until warmed through.
