Thaw 1 package (12 ounces) frozen corn according to the package directions and drain off any excess liquid if needed.
In a medium mixing bowl, combine the thawed corn, ¼ diced red onion, 2 deseeded and finely diced jalapeño peppers, and ½ cup chopped fresh cilantro.
Squeeze the juice from 2 limes over the corn mixture.
Stir until all the ingredients are evenly combined. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to marinate. Stir again before serving.
Serve with tortilla chips, crackers or even with grilled foods.
