This Mexican Corn Salsa Recipe is so good – I mean crazy good. When I make it I simply can’t stop eating it.
You can serve it with chips or you can serve it over some grilled chicken. Either way, this corn salsa recipe is a must at an Mexican dinner.
I have been making this for years and it is always a hit. This stuff is so good and is ridiculous how easy it is.
The only thing I did differently was that I added some red peppers. This would be fabulous for a party or any Mexican dinner.

Ingredients:
- Corn
- Red Onion
- Jalapeños
- Cilantro
- Limes
- Garlic Salt
- Pepper
How to make chipotle corn salsa:
First, you will need to chop all of your ingredients. You are going to do a lot of chopping so I highly recommend you get this stainless steel chopper.
I have one and I love it. It is a life saver when you have a ton of chopping to do. I use mine almost every single day.
Second, combine all ingredients in a bowl and let marinate in refrigerator for at least 30 minutes. That is all! I told you it was SO easy.
I also have a lime juicer and it is nice because it catches the seeds and gets every last bit of juice. Just another little gadget that helps make life easier.

Use what you have!
This recipe is super easy to modify based on what you have or can get. During the summer months, I use fresh corn instead of frozen corn. It is always on sale and I tend to always have fresh corn here.
You can also try using roasted corn for a different flavor. Yum!
I prefer red onion but it is just as delicious with a white onion if that is what you have. Try adding black beans after you finely chop the ingredients or roasted poblano peppers.
Once, I didn’t have enough lime juice so used a combination of lemon and lime juice. It was amazing.
