Time Saving Tip:

This recipe like many calls for diced onions and bell peppers. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions and peppers.

If you do not have one of these, I highly recommend them. They are such a time saver and you can get the veggies really fine if you have children that are picky.

I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.

This is how I meal prep. It’s so quick and easy and helps get dinner on the table fast.

  1. Oh my WOW! I made this mango salsa last weekend and it was a HIT! I put it all in my food processor, so it wasn’t pretty and chopped, but it still was incredible! Thank you Carrie for all of these amazing recipes!

  2. 5 stars
Sooo tasty, especially on a hot summer afternoon! Followed directions as written, except I didn’t remove jalapeno seeds. I like spicy! Let it sit in fridge for a few hours; the flavor is really amped up. Served with homemade baked tortilla chips. Will definitely make again!
