In a large bowl, whisk together the flour, baking powder, salt, and sugar.
Add the milk, beaten egg, vegetable oil, and vanilla extract. Stir just until combined. The batter will be slightly lumpy.
Gently fold in the Christmas sprinkles. Let the batter rest for 5 minutes.
Heat a skillet or griddle over medium heat and lightly spray with nonstick cooking spray.
Pour about ¼ cup batter onto the hot skillet for each pancake. Gently spread the batter if needed.
Cook for 2–4 minutes, or until bubbles form and begin to pop on the surface and the edges look set.
Flip and cook for another 1–2 minutes, or until golden brown and cooked through.
Repeat with the remaining batter.
Serve warm topped with whipped cream and additional Christmas sprinkles, if desired.
Notes
Store leftover pancakes in an airtight container in the refrigerator for up to 5 days.For best results, avoid overmixing the batter. A few small lumps are fine.
