Wash and dry 2 large broccoli crowns, 1 pint cherry tomatoes, 1 yellow bell pepper, 1 large carrot, 1 cup snap peas, 1 small head cauliflower, 1 large cucumber, and 1 small star fruit.
Cut the 2 large broccoli crowns into small florets, the 1 yellow bell pepper into thin strips, the 1 large carrot into thin rounds, the 1 small head cauliflower into small florets, the 1 large cucumber into rounds, and the 1 small star fruit into slices.
On a large rectangular serving platter, arrange the broccoli florets into the shape of a Christmas tree, starting with a wide base and gradually narrowing toward the top.
Scatter the 1 pint of cherry tomatoes throughout the broccoli to resemble Christmas ornaments.
Lay the yellow bell pepper strips diagonally across the broccoli tree to create a garland effect.
Place the carrot rounds throughout the tree to add more colorful ornaments.
Fill any empty spaces with the 1 cup of snap peas and the cauliflower florets to create a full, festive tree.
Arrange the cucumber slices around the bottom of the tree to create a tree skirt.
Place 1 slice of the star fruit at the top of the tree as the star topper.
Serve immediately with ranch dressing or your favorite vegetable dip on the side.

If you can’t find star fruit, a yellow bell pepper or a slice of pineapple cut into a star shape also works well as a topper.
