Line an 8x8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
In a medium saucepan over medium heat, combine the brown sugar, cinnamon, and corn syrup. Cook, stirring frequently, until the mixture just begins to simmer and the sugar has dissolved, about 2-3 minutes.
Remove the saucepan from the heat. Add the butter and peanut butter, stirring until completely melted and smooth.
Gently fold in the lightly crushed corn flakes until they are evenly coated.
Transfer the mixture to the prepared baking pan and press it firmly into an even layer using the back of a spoon or a spatula.
Place the chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until smooth and fully melted.
Spread the melted chocolate evenly over the peanut butter layer. If desired, sprinkle with flaky sea salt.
Let the bars sit at room temperature or refrigerate for 30-60 minutes, until the chocolate is completely set.
Lift the bars out of the pan using the parchment paper, slice into 12 bars, and serve.
Notes
Store any leftover bars in an airtight container for up to 1 week. Make sure not to overheat the chocolate or it could easily burn.Microwave it in only 30 second intervals to prevent it from burning. Lightly crushing the corn flakes helps them hold together while still providing plenty of crunch.Refrigerating the bars speeds up the setting time and makes them easier to slice cleanly.
