Add the popcorn kernels and vegetable oil to a medium saucepan over medium-low heat. Cover and shake the pan frequently until most of the kernels have popped.
Transfer the popped popcorn to a large mixing bowl.
In a microwave-safe bowl, combine the butter, brown sugar, cinnamon, and vanilla. Microwave for about 20 seconds, or until the butter is melted. Stir until combined.
Pour the brown sugar mixture over the popcorn and gently toss until evenly coated.
Place the white chocolate chips in a microwave-safe bowl. Microwave in short intervals, stirring between each, until melted and smooth.
Drizzle the melted white chocolate over the popcorn.
Allow the chocolate to set slightly, then serve and enjoy.
Notes
Store the popcorn in an airtight bag or container at room temperature for up to 1 week.Light or dark brown sugar can be used.If using microwave popcorn instead of kernels, use 2 bags.Canola or avocado oil can be substituted for the vegetable oil.
