Make Corn Fritters in under 25 minutes for the ultimate summer snack or as a BBQ side dish. Crispy fritters are made with simple ingredients and packed with sweet corn.
2cupsCorn Kernels freshthawed from frozen or canned, drained
½cupAll Purpose Flour
½cupYellow Corn Meal
1TablespoonGranulated Sugar
2teaspoonsBaking Powder
1teaspoonSalt
2Large Eggs beaten
½cupHeavy Cream
2-3TablespoonsVegetable Oil
Instructions
In a large mixing bowl, combine 2 cups corn kernels, ½ cup all purpose flour, ½ cup yellow corn meal, 1 tablespoon granulated sugar, 2 teaspoons baking powder, and 1 teaspoon salt.
Stir in 2 beaten large eggs and ½ cup heavy cream until the batter is fully combined.
Heat 1–2 tablespoons vegetable oil in a large skillet over medium-high heat.
Scoop the corn mixture into the skillet using a ¼ cup measuring cup and gently flatten each portion into patties.
Cook each fritter for 4–5 minutes until browned on the bottom.
Flip the fritters and cook for another 4–5 minutes on the other side, watching closely to prevent burning.
Continue cooking the remaining fritters until all the batter has been used.
Serve warm with your favorite toppings and enjoy!
