Cornbread Muffins are just so easy to make and much better than those store bought mixes. This cornbread muffin recipe is delicious and a family favorite.
Preheat the oven to 400°F and spray a 12-cup muffin tin with nonstick cooking spray.
In a large mixing bowl, combine 1 cup all-purpose flour, 1 cup yellow cornmeal, ½ cup white sugar, 1 teaspoon salt, and 3 teaspoons baking powder. Stir until well mixed.
Add 1 egg, 1 cup milk, and ? cup vegetable oil to the dry ingredients. Stir until all ingredients are fully combined.
Divide the batter evenly among the 12 prepared muffin cups.
Bake for about 10 minutes, or until the tops are lightly golden brown and a toothpick inserted into the center comes out clean.
Allow the muffins to cool for several minutes before removing them from the pan.
Serve warm with homemade butter if desired.
