8Sliced Baconcooked and crumbled

For the Dressing:
1cupMayonnaise
1cupSour Cream
1packetRanch Dressing Mix1 ounce packet
Instructions
Prepare 1 pan cornbread according to package directions or your favorite homemade recipe and allow it to cool completely.
Crumble the cornbread into a large bowl.
Add 1 finely chopped sweet onion, 1 chopped red bell pepper, 2 chopped large tomatoes, 1 can sweet corn (drained), 1 can pinto beans (rinsed and drained), 1 cup shredded cheddar cheese, 8 slices cooked and crumbled bacon, and 3 sliced green onions.
In a separate bowl, whisk together 1 cup mayonnaise, 1 cup sour cream, and 1 packet ranch dressing mix.
Pour the dressing over the salad and stir until everything is evenly coated.
Cover and refrigerate for at least 1 hour before serving.
Serve chilled.
Notes
Store the leftovers in an airtight container in the refrigerator for up to 3 days. The cornbread will get mushy after a few days so this salad is best served immediately.
