Fettuccine Pasta
For the Sauce:

Cottage Cheese

Arrowroot Powder
or cornstarch

Instructions
Bring a large pot of water to a boil and cook 1 pound fettuccine pasta according to the package directions until al dente. Drain and set aside.
In a blender, combine 2 cups cottage cheese, 1½ cups milk, 2 cloves minced garlic (or 2 teaspoons minced garlic), ½ cup grated Parmesan cheese, 1 teaspoon arrowroot powder (or cornstarch), 1 teaspoon salt, and ¼ teaspoon black pepper. Blend until smooth and fully combined.
Pour the sauce mixture into a large skillet and heat over medium-high heat.
Cook the sauce for a few minutes, stirring occasionally, until warmed through.
Add the cooked fettuccine pasta to the skillet and toss to coat evenly in the sauce.
Cook for a few more minutes as the pasta absorbs the sauce. Add additional milk if needed to thin the sauce to your desired consistency.
Serve warm and enjoy!
