How to Make Cottage Cheese Alfredo Sauce

  • Step 1 – Boil the pasta based on the package to al dente in a large pot.  Drain and set aside.

Step 2 – Put all the sauce ingredients in a blender and blend until smooth and combined.

Step 3 – Pour the sauce into a large skillet and heat over medium high heat.

Step 4 – Cook for just a few minutes and then toss the cooked pasta into the sauce.

    I was interested in this receipe as I have kidney disease and the high protein in this dish is good for me. I used the recipe as a basis to tinker with it. I added chopped red pepper and chopped red onion, black olives, smoked paprika, dried garlic. I changed the cheese to Romano. I also added sliced link sausage. It’s mild, so chilies or hot peppers will work too. My husband rated it 5 stars-so did I. Thanks for a recipe that I can use in various ways. It’s a winner.

    I havenโ€™t made the Alfredo yet, but here is a simple salad to try.
    Cottage Cheese Pear Salad
    Lettuce leaves
    Cottage cheese
    Canned pear halves, drained
    Miracle whip
    Lay lettuce leaves in the bottom of a bowl. Scoop some cottage cheese into the center. Lay one pear half in the center of that. Dollop the center of the pear half with miracle whip. Serve cold. I make these individually. Lettuce can also be chopped.
