Expert Tips

  • Preparing Broccoli – Cut the larger pieces into florets through the base of the head with a small knife making sure they are similar-sized pieces for even cooking. See How to cut Broccoli into Florets for tips on cutting the thick stalks. The broccoli will shrink as it roasts, so don’t cut the florets too small.
  • Adding Kosher Salt – You may need an additional ½ teaspoon of salt as the cheese contributes saltiness also. So just start with ½ teaspoon and then add more to taste.
  • Combining Ingredients – For the best flavor, coat the broccoli florets with the parmesan mixture. If you make more than one head of broccoli, you will need to make more mixture.
  • Baking Sheet – We like to preparing the baking sheet by placing a sheet of parchment paper and aluminum foil for easy cleanup.
