Variations Ideas

  • Chicken – We used chicken breast in this recipe, but you can also use skinless chicken thighs.
  • Pasta – Feel free to use different types of pasta. You can use rigatoni, ziti or any small pasta.
  • White Wine – Instead of using chicken broth you can substitute for white wine.

Step by Step Instructions

Cooking the chicken in the large pot with the seasoning

Step 1 – Heat olive oil in a large pot over medium-high heat. Season the chicken pieces with salt and pepper, and add them to the pot. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove chicken and set aside.

Cooking the garlic in the large pot

Step 2 – In the same pot, add a bit more oil if needed and sauté the garlic for about 1 minute until fragrant. Cook in a large skillet over medium heat.

Pour the broth, heavy cream in a large pot

Step 3 – Pour in the chicken broth and heavy cream, and bring the mixture to a boil.

Stirring in the pasta to the cream mixture

Step 4 – Add the uncooked pasta to the pot, stirring occasionally, and let it cook for about 8 minutes, or until it’s almost done.

Adding in the broccoli to the pasta mixture

Step 5 – Add the broccoli to the pot, cover, and cook for an additional 3-4 minutes, or until the pasta is al dente and the broccoli is tender.

Adding the ingredients in a large pot with a wooden spoon

Step 6 – Return the cooked chicken to the pot and stir in the Parmesan cheese until melted and well combined. If the sauce is too thick, add a little more broth or cream to reach your desired consistency. Adjust seasoning with additional salt and pepper if needed.

  • Step 7 – Serve hot, garnished with red pepper flakes, lemon zest, or chopped fresh herbs like parsley or basil if desired.

Recipe Tips

  • Chicken – When preparing the chicken, we recommend cutting in about the same size pieces. This ensures that the chicken cooks evenly.
  • Pasta – There is no need to cook the pasta beforehand. The pasta will cook al dente in the broth in about 8 minutes.

If you prefer a lighter version, you can substitute the heavy cream with half-and-half or an extra splash of chicken broth.
For an additional burst of freshness, try adding a squeeze of lemon juice or a bit of lemon zest before serving.
