I have a large family so I’m always looking at ways to create easy and affordable meals that are still nutritious for my family.

However, I generally don’t have a ton of time to prepare dinner due to all the different schedules and school activities that I’m managing for my large family.  It feels like we have somewhere to be almost every night of the week.

So quick, easy and affordable are my priorities when it’s time to get dinner on the table!

Thanks to  Knorr® Selects prepackaged sides, I can easily prepare dinner in no time at all.  Knorr® has created these great products that do not have any artificial sweeteners or preservatives.   I love that I know exactly what I’m feeding my family.

After I created this delicious Easy Sausage Spinach Florentine Recipe, I knew immediately that I wanted to try more one pot meals with the Knorr® Selects products so I could feed my family healthy meals without breaking the bank or slaving away in my kitchen.

I went to my local grocery store to see what other flavors were available.  I was surprised by how many options that they offer. From rice to risotto to pasta, they definitely have something for everyone to enjoy.

My family loves chicken and broccoli pasta recipes, so I was excited when I saw the Knorr® Selects White Cheddar Broccoli with Cavatappi Pasta as I knew immediately that I could use it to create a healthy dinner for my family in no time at all!

What is needed to create this easy chicken broccoli pasta recipe?

This recipe can be created with less than 10 ingredients.  That’s always a win in my household as I don’t love complicated recipes and I enjoy using ingredients that I have on hand or can find easily in my local grocery store.

  • Knorr® Selects White Cheddar Broccoli with Cavatappi Pasta
  • Cooked Chicken
  • Olive Oil
  • Red Bell Pepper
  • Broccoli
  • Mushrooms
  • Water
  • Milk
  • Parmesan Cheese

See, I promise, this will not be complicated.  Also, the Knorr® Selects White Cheddar Broccoli with Cavatappi Pasta is packed with flavor so you don’t even have to add any additional seasoning.

What type of cooked chicken is needed for this recipe?

Generally, I like to cook extra chicken when chicken is needed for one meal so that I’ll have it available for a simple crock pot recipe or an easy skillet recipe.  This tip has saved me tons of time in the kitchen.

I have used this leftover cooked chicken to create many meals like this crock pot chicken Alfredo casserole or this crock pot chicken enchilada casserole and now I can add this recipe to that list as well!

However, if you don’t have any leftovers available, you can use a roisterer chicken from the grocery store or you can boil any type of chicken to use in this recipe.

How to make chicken broccoli pasta quickly:

First in a large skillet, sauté the chicken and the mushrooms in the olive oil for approximately 5-8 minutes over medium heat until the mushrooms are tender.

Then stir in the broccoli, red pepper, contents of the Knorr® packets, water and milk.

Bring these ingredients to a boil. After it begins to boil, turn down the heat to medium and cook covered for 5 minutes, stirring occasionally.

After this time, remove the lid and cook uncovered for an additional 5 minutes, stirring constantly, until the pasta is tender.

Then allow the cheesy chicken broccoli pasta to set for 2-3 minutes until thickened. Top with the parmesan cheese. Serve and enjoy!

How affordable is this this chicken and broccoli pasta?

Since I have a large family, affordability is a necessity in my household.  I was able to create this recipe for under $10!

This is more affordable than any fast food around me.  Also, I love that I was able to provide my family with a nutritious meal for under $10 and it was ready to enjoy in under 20 minutes.

Everyone in my family loved this creamy chicken broccoli pasta.  We didn’t have any leftover which is a great problem to have in my house!

Ingredients

  • 2 Packages Knorr® White Cheddar Broccoli with Cavatappi Pasta
  • 3 cups Cooked chicken Diced
  • 2 tbsp Olive oil
  • 1 Red bell pepper Diced
  • 8 oz Broccoli Fresh, chopped
  • 4 oz Mushrooms Sliced
  • 1/2 cup Milk
  • 3 1/2 cups Water
  • ¼ cup Parmesan cheese

Instructions

  • In a large skillet, sauté the chicken and the mushrooms in the olive oil for approximately 5-8 minutes over medium heat until the mushrooms are tender.
  • Then stir in the broccoli, red pepper, contents of the Knorr® packets, water and milk.
