- chicken breasts
- Linguine
- Butter
- mushrooms
- minced garlic
- salt and pepper
- flour
- chicken broth
- heavy whipping cream
- Parmesan cheese
How to make chicken tetrazzini from scratch:
Cook the linguine based on the package instructions. Drain and save some of the pasta water.
In a large skillet, melt ½ of the butter amount over medium heat.
Add the mushrooms and cook until they are tender.
Next add in the chicken, minced garlic, salt and pepper. This is going to make your kitchen smell amazing!
Cook until the chicken is golden brown on all sides stirring occasionally.
Remove the chicken and mushrooms from the pan to a separate dish. Leave any remaining sauce in the large skillet.
Then over medium heat, melt the remaining butter in the large skillet.
Whisk in the flour until thoroughly combined.
Next, whisk in the broth and heavy whipping cream adding them each slowly.
Now it is time to cook the sauce until it thickens.
Toss in the pasta, chicken and mushrooms to combine. Add some of the pasta water if needed to thoroughly combine.
Top with the Parmesan cheese. Cover the skillet with a lid to melt the cheese and serve immediately!
What to serve with chicken tetrazzini?
This is delicious served over linguine. However, you can try other types of pasta. I think angel hair pasta and even spaghetti noodles would be good.
Egg noodles are also great in this dish.

The calorie and sodium counts are through the roof! I for sure wanted to try the recipe until I read those figures. Have you got a similar but more healthy version of this?
I live on the Gulf Coast and had fresh shrimp so subbed shrimp for the chicken & it was so good. I didn’t add the shrimp until after I mixed sauce with the pasta so it didn’t overcook Shrimp then put it all in the oven for 15 minutes then topped it off with Parmesan before serving. Garlic bread & cucumber tomato salad as sides. Grandma, kids & grandkids ate it up. BIL asked me to make it again because he was at work and there wasn’t much leftover when he got here.
Enjoyed this dish when I was in hurry to make a meal one night for the family. They ate it up.
