Pour the cottage cheese into a blender and blend until smooth. Pour into a mixing bowl.
Stir in the shredded chicken, 1 cup shredded cheese, buffalo sauce and garlic powder until combined.
Pour into a 9X9 baking pan and a 3 quart baking dish. Sprinkle the remaining cheddar cheese on top.
Bake for 15-20 minutes until the dip is bubbly.
Remove from the oven, let it cool slightly and then it’s ready to serve topped with the diced green onions with chips and veggie sticks. Enjoy!

Notes
You don’t have to blend the cottage cheese before mixing in with the other ingredients but the cheese curds won’t melt completely (this bothers some and not others), so blend based on your preference. You can make the dip with leftover shredded chicken, shred chicken from a rotisserie chicken or make your own shredded chicken. Refrigerate any leftovers in an airtight container for up to 5 days. Reheat the leftover dip in the oven or microwave to reheat it as needed.
