4largeRusset Potatoes(peeled and cut into 1/2" chunks)
1teaspoon pepper
2teaspoonsminced garlic
2canscream of mushroom soup(10 oz cans)
1cupHeavy whipping cream
Instructions
Heat a large skillet over medium-high heat. Sear the pork chops on both sides until lightly browned.
Place the seared pork chops in the bottom of a 6-quart slow cooker.
Top the pork chops with the potatoes, black pepper, and minced garlic.
Spoon the cream of mushroom soup evenly over the potatoes and pork chops.
Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the pork chops are tender and the potatoes are cooked through.
About 30 minutes before serving, stir the heavy whipping cream into the sauce. Cover and continue cooking until heated through.
Serve the pork chops with the potatoes and creamy sauce.
Notes
Refrigerate the leftovers in an airtight container for up to 5 days. If the sauce is too runny, whisk together ¼ cup water with 2 tablespoons cornstarch and then stir into the sauce and allow it to thicken.
