This Crack Chicken Chili combines shredded chicken, bacon, black beans, corn, and tomatoes with ranch seasoning, cream cheese, and cheddar. It is rich, hearty, and costs just $2.18 per serving.
110-ounce can diced tomatoes with green chilies, undrained

11-ounce packet ranch dressing mix

18-ounce package cream cheese, cubed
2cupsshredded cheddar cheese

Instructions
Place boneless, skinless chicken breasts in the bottom of a slow cooker.
Add can of corn, drained and rinsed 15-ounce can of black beans, undrained 10-ounce can of diced tomatoes with green chilies, chicken broth, slices chopped cooked bacon, ranch dressing mix, garlic powder, chili powder, onion powder, salt, and black pepper.
Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken shreds easily.
Remove the chicken from the slow cooker and shred it with 2 forks.
Stir the shredded chicken back into the slow cooker.
In a small bowl whisk together cornstarch with water until the cornstarch is dissolved.
Stir this mixture into the crock pot.
Cut cream cheese into cubes. Stir the cream cheese and shredded cheddar cheese into the slow cooker.
Cover and cook on low for 30–40 minutes, until the cheese is melted and the chili has thickened.
Serve warm and enjoy.
