1packetRanch Seasoning Mix1 oz packet
1cupSour Cream
2cupsCheddar Cheeseshredded
½tspSalt
½tspPepper
1green Oniondiced
Instructions
Preheat oven to 400°F.
Peel and dice 2 lbs russet potatoes into 1-inch pieces. Toss with 3 Tbsp melted butter, ½ tsp salt, and ½ tsp black pepper.
Transfer potatoes to an 8×8 baking dish, cover with foil, and bake for 40–50 minutes until tender.
In a bowl, mix 1 cup sour cream, 1 packet ranch seasoning, ½ of the cooked and chopped bacon (4 slices), and 1 cup shredded cheddar cheese.
Pour the mixture over the cooked potatoes and gently stir to coat.
Top with remaining 1 cup shredded cheddar cheese and remaining 4 slices chopped bacon.
Bake uncovered for 5–7 minutes, until cheese is melted.
Top with 1 diced green onion and serve warm.

*You can use a 30 oz bag of diced hash brown potatoes instead of potatoes for this recipe.*I used Russet potatoes but red potatoes would be delicious in this recipe as well.*Refrigerate the leftovers in an airtight container for up to 5 days.*Use a dry seasoning mix not ranch dressing for this recipe.
