Creamed Spinach is a delicious side dish that can easily be made ahead of time. This classic side dish is made with spinach, cream cheese and simple seasoning.
Melt the butter in a large skillet over medium-high heat.
Add the diced onion and sauté for 5–6 minutes, or until softened and translucent.
Add the spinach and season with salt and pepper. Cook for 3–5 minutes, stirring frequently, until the spinach is wilted.
Stir in the minced garlic and cook for 1 minute, or until fragrant.
Reduce the heat to low. Add the cream cheese and stir until completely melted and combined with the spinach.
Stir in the Parmesan cheese and cook until melted and creamy.
Remove from the heat and let the creamed spinach sit for a few minutes to thicken.
Serve warm.
Notes
The creamed spinach will thicken slightly as it cools.Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat gently on the stovetop or in the microwave before serving.
