Crock Pot 15 Bean Soup with ham is so frugal and a great way to feed a crowd. The soup is so delicious and packed with flavor that everyone will want more.

Ingredients
1package15 bean soup with seasoning packet
1poundhamdiced
½oniondiced
1teaspoonminced garlic
1teaspoonchili powder
1can diced tomatoes15 oz
8cupschicken broth
hot sauce(option for serving)
Instructions
Rinse and drain 1 package 15 bean soup mix with the seasoning packet included. Sort through the beans and remove any debris.
Add the rinsed beans and the seasoning packet to a 6-quart slow cooker.
Add 1 pound diced ham, ½ diced onion, 1 teaspoon minced garlic, 1 teaspoon chili powder, and 8 cups chicken broth to the slow cooker.
Cover and cook on low for 7–8 hours, or until the beans are tender. You can also cook on high for about 5 hours, though low heat is recommended for best flavor.
Once the beans are tender, stir in 1 can (15 oz) diced tomatoes and cook for 10–15 more minutes, until heated through.
Serve warm and add hot sauce to individual servings if desired.

I recommend adding the diced tomatoes at the end of the cooking time after making this for years, I have learned that the acidity of the tomatoes slows down the cooking process for the beans and keep them from getting tender so mixing them in at the end prevents this.
