These Crock Pot Beef Gyros are tender slow cooked beef with oregano garlic and lemon juice stuffed into warm pita with homemade tzatziki sauce — just $3.64 a serving and so much better than paying $12–15 at a restaurant.
Place the beef, sliced onion, minced garlic, oregano, salt, pepper, and fresh lemon juice in a 6-quart slow cooker. Stir to coat the beef evenly with the seasonings.
Cover and cook on LOW for 6-8 hours or until the beef is fork-tender.
About 30 minutes before serving, prepare the tzatziki sauce. In a medium bowl, stir together the Greek yogurt, shredded cucumber, dill, minced garlic, ¼ teaspoon salt, and a pinch of black pepper until well combined.
Cover and refrigerate the tzatziki sauce until ready to serve so the flavors can meld.
Once the beef is finished cooking, stir it well to coat it in the cooking juices. If desired, use a slotted spoon to remove excess liquid.
Warm the pita bread according to the package directions.
Fill each pita with the beef, then top with sliced tomatoes, lettuce, and a generous spoonful of the tzatziki sauce.
Serve immediately with extra tzatziki sauce on the side.
Notes
Chuck roast becomes very tender after slow cooking and is the best cut for this recipe.
For the best texture, squeeze as much moisture as possible from the shredded cucumber before mixing it into the tzatziki sauce.
Leftover beef can be refrigerated for up to 4 days and is delicious in wraps, rice bowls, or salads.
