Ingredients

medium size head fresh cauliflower

teaspoon
minced garlic

chicken broth

heavy cream

grated cheddar cheese

cooked until crisp and diced

green onion

Instructions
Chop 1 medium head of cauliflower into chunks and place it in the bottom of a slow cooker.
Season with ½ teaspoon salt, 1 teaspoon pepper, and 2 teaspoons minced garlic.
Pour 3 cups chicken broth over the cauliflower.
Cover and cook on low for 6 hours.
Before serving, blend the cauliflower mixture in the slow cooker using a hand mixer or immersion blender until smooth.
Stir in 1 cup heavy cream and 2 cups grated cheddar cheese until melted and well combined.
Serve topped with 6 slices cooked and diced bacon, remaining 1 cup cheddar cheese, and 3 sliced green onions.
Serve warm and enjoy!
