Spray a 6-quart crock pot with nonstick cooking spray.
Break apart the frozen hash browns while they are still in the bag to separate the potatoes.
In a large bowl, whisk together the cream of chicken soup, milk, and sour cream until smooth.
Stir in the hash browns, onion, and half of the shredded cheddar cheese until well combined.
Spread the mixture evenly in the crock pot and sprinkle the remaining shredded cheese on top.
Cover and cook on Low for 4–5 hours or High for 2–3 hours, until the potatoes are tender and the casserole is heated through.
Serve warm and enjoy!

Manufacturers change the sizing on frozen shredded hashbrowns but they normally range from 26oz to 32 oz. We have tested all the sizes and they all work great.I usually use shredded hash browns for this recipe, but you can also use diced hash browns or the hash browns with green peppers and onions mixed in. Refrigerate leftovers in an air tight container for 5-7 days. Top with a small amount of melted butter when reheating to add moisture back to the casserole when reheating. If the potatoes are still firm after the max cook time, cover and cook in 30-minute increments until fork-tender — slow cookers vary. If the sauce looks slightly separated, a quick stir before serving brings it back together.
