Ingredients

Instructions
Place 1 pound chicken breasts, ½ small diced onion, 2 chopped carrots, 2 diced celery stalks, 2 teaspoons minced garlic, 1 teaspoon salt, 1 teaspoon pepper, ½ teaspoon dried thyme, 1 bay leaf, 6 cups chicken broth, and ¾ cup wild rice-brown rice blend into a crock pot.
Stir to combine the ingredients.
Cover and cook on Low for 4 to 6 hours, or until the chicken is cooked through and the rice is tender.
Remove the chicken from the crock pot and shred it with two forks.
Return the shredded chicken to the soup and stir to combine.
Remove and discard the bay leaf before serving.
Serve warm and enjoy!
