Crock Pot Chicken and Zucchini Recipe is a simple slow cooker meal that is frugal and tasty. Give this healthy recipe a try for a dinner everyone will love.
Place 3 boneless skinless chicken breasts in the crock pot.
Add 1 diced onion, 1 jar marinara sauce, 2 teaspoons minced garlic, 1 tablespoon Italian seasoning, 1 teaspoon salt, and ½ teaspoon pepper over the chicken.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
Shred the chicken in the crock pot and stir it into the sauce.
Stir in 2 sliced and halved zucchini.
Cover and cook for an additional 30 minutes, until the zucchini is tender.
Top with 2 cups shredded Parmesan cheese.
Cover and cook for 5-10 minutes, until the cheese is melted.
