We love one pot meals and this Crock pot chicken quinoa soup recipe does not disappoint. It's full of tasty chicken, veggies and quinoa for a great meal.
Place 2 chicken breasts (cut into large pieces), 1 cup rinsed quinoa, 3 peeled and diced carrots, 2 diced celery stalks, and ½ diced onion into a crock pot.
Add 4 cups chicken broth, 2 cups water, 1 Tbsp minced garlic, 2 bay leaves, 2 Tbsp fresh parsley, 2 tsp dried oregano, 2 tsp dried basil, ¼ tsp red pepper flakes, 1 tsp salt, and 1 tsp black pepper.
Stir the ingredients together to evenly distribute the seasonings.
Cover and cook on Low for 6 hours or on High for 3 hours.
Remove the chicken from the crock pot and shred it into large pieces using two forks.
Return the shredded chicken to the crock pot and stir to combine.
Remove and discard the 2 bay leaves.
Serve the soup warm and enjoy.
