Crock pot Chicken Quinoa Soup recipe
Ingredients
- 2 chicken breasts
- 2 cups quinoa
- 3 full size carrots diced
- 2 celery stalks diced
- 1/2 onion diced
- 2 tbsp fresh parsley
- 64 oz. chicken broth
- ½ teaspoon thyme
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Place everything but the parsley in the crock pot. Cook on low 6 hours.
- Remove chicken and shred into bite size pieces.
- Stir chicken back into the crock pot.
