We recently made Keto Broccoli Cheese Soup Recipe.  Everyone enjoyed it so much that I wanted to try another low carb soup for dinner.
Creamy Jalapeno Popper Soup is comfort food at its best and full of of delicious shredded chicken, bacon and just the perfect amount of heat with the diced jalapenos. The beauty about this soup is you can easily make it to suit your tastes.
We all love spicy food so I put extra jalapeno peppers in ours. However, if you have kids or family members that don’t like the extra heat, just reduce the amount of jalapeno’s.
This easy Jalapeno Popper Soup is perfect for the entire family.
Even though this soup is low carb and keto, everyone will enjoy it. You don’t need to fix something different for the others because this delicious soup will impress everyone.
My kids gobbled this up and asked for more! Anything with bacon is pretty much guaranteed to be a hit around here.

Keto Jalapeno Popper Soup can be made in the crockpot or instant pot!
We just love recipes that are versatile and can easily be adapted to our busy schedules. Sometimes, I like to set it and forget it with the slow cooker. Other times, I like to use the pressure cooker.

If you use a pressure cooker, we like to use this  8 quart Instant pot but you can use a 6 quart.

It’s really changed dinner time around here. Those days when I forget to take something out of the freezer is not a problem with my instant pot.
I can still have dinner ready and waiting on my family! I used frozen chicken in this recipe and it still cooked super fast in my instant pot.
No worries if you do not have a pressure cooker yet, try making this yummy soup in your crockpot.
If you are in the market for something new, I really love my Ninja cooker. We use this one frequently because you can brown the meat in the same slow cooker for recipes that call for that.

I also like to use crock pot liners to make clean up a breeze. These are worth every penny and save a ton of time.
How do you quickly shred chicken for Low Carb Jalapeno Popper Chicken Soup Recipe?
I use a hand mixer to shred the chicken faster. It is so easy and one of my best time saving kitchen tips!
If you are not shredding your chicken this way, you are missing out. It can be done in a fraction of the time by doing it by hand.
Plus, I love the texture of the chicken when you use the hand mixer.

Ingredients:Â
- 3 boneless chicken breasts
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 2 Tablespoons of Taco seasoning (I use this homemade taco seasoning recipe)
- 1 fresh jalapeños seeded and chopped
- 1/4 of an onion, chopped
- 2 cups chicken broth
- 1/2 lb of bacon (save 3 pieces for toppings)
- 1 8oz container of cream cheese
- 1 cup cheddar cheese
- 1 teaspoon Xanthan Gum
- 1 fresh jalapeños chopped and reserved for topping
How to make Jalapeno popper chicken soup recipe in the Instant Pot:
- Add everything except cheddar cheese, xantham gum, and the toppings to the Instant pot.
- Add the lid and set the valve to sealing
- Set the pressure to 30 minutes.
- Do a quick release to release the pressure.
- Remove chicken and shred.
- Return the chicken to the pot, with the cheddar cheese and the xanthan gum. Stir to combine as cheese melts.
- Allow it to sit to thicken for 15 minutes.
- Add your favorite toppings and enjoy
How to make Slow Cooker Jalapeno Popper Soup:
- Add everything except cheddar cheese, xantham gum, and the toppings to the crock pot.
- Add the lid and cook on low for 8 hours or high for 4.
- 1 hour before serving, remove the chicken and shred.
- Add chicken back to the crock pot, with the cheddar cheese and the xanthan gum. Stir to combine.
- Allow it to thicken.
- The serve and Add your favorite toppings and enjoy

With only 3 chicken breasts in this recipe, it is a great way to stretch your meat budget. This soup is so easy to prepare and very inexpensive.
It’s so budget friendly and the perfect soup to easily feed a crowd. This soup recipe is always a hit when I make it.
My kids go crazy over this soup and ask for seconds. I love when all 8 of my kids enjoy a meal I cook and gobble it up!
Can I substitute something else for chicken breasts in this soup?
You can try using chicken thighs instead. I bet you could even do a mix of thighs and breasts.
Feel free to use what you prefer and shred it all together. I often just use what I have in the freezer or what is on sale at the grocery store.
Whichever type of chicken you decide to use will be delicious in this recipe.

I use a small food chopper or food processor to quickly and easily chop onions. If you do not have one of these, I highly recommend them.
They are such a time saver and you can get the veggies really fine if you have kids like mine.
I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.

I made this in a Dutch Oven on the stove-top, and the soup came together beautifully! It tastes great~ I used one cup of heavy whipping cream, and one and a half cup of bone broth…Then used the immersion blender to smooth out the beacon, chicken, onions, and jalapenos. Great recipe!!

Nikole – The recipe makes 6 servings and the nutrition facts are for 1 serving so it’s for approximately 1/6 of the entire batch. Each batch varies on the actual size so it’s hard to put an exact measurement on it. I’m glad you liked it!

I added the xantham gum about to the post and recipe. It’s 1 teaspoon. Also, I add only the cheddar cheese and xantham gum at the end once the chicken is cooked. The cream cheese is cooked with the chicken. I have updated the post with this clarification. Thank you!
